Hi. I'm Chef Gui, an ACF certified Executive Chef born, raised and classically trained in the South of France.

STARTED AS A CHILD...
As a child in the South of France, I don’t remember anyone being preoccupied with dieting.
People simply concentrated on what to cook and eat for dinner (and a very late dinner at that!).
It was always about the enjoyment of great food. A celebration of life, if you will. It was like being on a permanent vacation. We walked to the busy outdoor market, caught up with friends we ran into, and planned our meals based on whatever ingredients were fresh and in season.
If the eggplants, zucchini, basil and tomatoes looked good, then we had ratatouille for dinner. If we came across a particularly fresh fish? We grilled and paired it with ratatouille.
Discussions at the outdoor market revolved around eating. Meal plans involved fresh vegetables, some healthy protein, whole grain carbohydrates, fiber, and there was always room for the most nutritious ingredients. Red wine flowed, and we stayed for hours at the dinner table, lingering and socializing among family and friends. What glorious experiences!
BUT TIMES HAVE
We’re all busier now and often in a hurry. We are bombarded by fast food and processed foods everywhere we turn.
Eating healthy isn’t always the easiest choice. I get that. But I love remembering those times and get inspired by the Mediterranean way of life. And that’s why I want to teach you how to eat healthier versions of the foods you love while still maintaining or losing weight.
Nothing can be further from the truth!
Most low-fat and non-fat foods are loaded with sugar and add in a bunch of processed ingredients.

Well, that depends on the carbohydrate. Fruit and vegetables are carbs and you wouldn’t want to cut them out would you?
The truth is, not all carbs are created equal. Complex carbs – such as un-refined whole wheat products, brown rice, oats, barley, beans and legumes – are loaded with fiber, which can make you feel fuller longer and help control appetite.
Plus carbs are necessary because they break down into glucose, providing the main fuel for our brains and nervous system.
Ummm, false again. Most sugar-free foods have toxic and artificial chemicals like aspartame and saccharin, which have been linked to cancer and other diseases.
Plus, sugar-containing foods in their natural form, like whole fruit for example, tend to be highly nutritious—nutrient-dense, high in fiber, and low in glycemic load. So even though they have sugar, they provide nutrients, unlike a soda, which provides none.
This might be the biggest MYTH of them all. Not only is a low-calorie diet not sustainable for the long term but it signals your body it’s in starvation mode, holding on to anything you feed it.
Your metabolism slows down. Your body loses its efficiency to naturally burn fat. It doesn’t get the nutrients it needs. And worst of all, you feel hungry all the time. In the end, you lose nothing but your patience and sanity.
The big food industry wants you to believe the MYTHS and buy their pre-packaged, overly processed and fake food.
But the truth is, real, simple, wholesome and natural ingredients are what you should be eating as much as possible. My cooking philosophy follows these same principles, and I avoid processed items at all costs.
